I realized yesterday that I had been home from Phoenix one whole week and the only thing I managed to actually cook was some fideo (which is ridiculously easy and good). I made a double batch and ate it all week. Other than that, it’s been pre-packaged/store bought/etc and oh! How good it felt to get back into the kitchen.
I had some tofu marinating in this marinade all week, thinking I’d get to it sooner. Everyday Dish is such a helpful site. Not only do they have lots of delicious recipes and guest posts from awesome vegan chefs, they have videos so you can see how it’s done. I love to watch people cook so I can visualize each step when I go to make it myself. So, yeah, Food Network! Listen up! More vegan programming! Any vegan programming!
I decided yesterday that THAT WAS IT and no more crappy processed food! I decided to make breaded chicken-style tofu steaks & broccoli-mushroom quinoa. I made that recipe up because I’m awesome. I was originally going to pair it with brown rice but that takes too long for me sometimes. It takes almost an HOUR, you guys. Gross. We went to Costco when we bought our house and purchased a gigantic bag of short grain brown rice (what up, Lundbergs!) and it is taking forever to finish it. I don’t know why we bought so much. It makes me feel like I can’t buy any other kind of rice now until that is gone. In conclusion, giant bag of rice=not necessary unless the world is ending. The world isn’t ending though! Right, guys? EVERYTHING IS FINE.
Where was I? Rice! I was going to do rice but instead made quinoa. I sauteed some mushrooms and garlic, deglazed that with some white wine, threw in some finely chopped broccoli florets and the rinsed quinoa, and then a mixture of water and the leftover tofu marinade. BA-BAM! While I let that cook, I took my tofu and pressed it into a plate of panko. I baked the tofu for 40 minutes (20 each side) at 400.
Once it was all done, we paired it with a nice green salad and some recorded Daily Show. I didn’t write this out as a real recipe because I honestly didn’t reeeeeally measure anything. It was one of those times that I decided to just throw together what we had and it actually worked! It’s like I’m good at cooking sometimes!
I will leave you with a picture of this meal and can I just say something? I really need to find my camera. These iPhone pictures are starting to get embarrassing. Two words I never spell correctly the first time: embarrassing and recommend. Wait, I just did it. Nevermind.

I took an unintended break from posting due to something I like to call “PMS”. That stands for “Please Makeit Stop”! Just kidding. It stands for something else.
So, I’ve been craving kimchi fried rice lately like a crazy person. Krazy for Kimchi. Which is weird because I’ve only had it one time. Do you ever crave food that you have never had? I do. I like to dream up new food all the time. Back to the point. I am so gonna make kimchi fried rice soon and I will share it here! I even found some raw vegan kimchi at the market today.
With the cutest name ever! Firefly Kimchi! AGH! The ingredients are super simple, also: Organic green cabbage, organic garlic, organic ginger, celtic sea salt, and korean red peppers. Watch for my recipe!
So, the past couple of weeks have been intense in my life. Lots of challenges (good & bad), lots of growth, and unfortunately, that meant a fair portion of stress. Went to Phoenix, had Lasik (thanks mom!), came home to a sick boyfriend, started a blog, agreed to begin working 6 days a week, quit my volunteer position, and lots of other little things that have all added up. All of this to say, I was needing some comfort food and have eaten my weight in fideo the past few days so I headed out. Out into the spring air, searching for something, I did not know what.
What I found was perhaps one of the tastiest sandwiches I’ve ever had. I bought a premade tempeh reuben from the market made by none other than the Wayward Cafe. An iphone photo:
Now doesn’t that just make you want to NOT EAT THAT AT ALL? Please believe it was good. Oh good jesus in a bucket, this was so good. And it was COLD! And I start some sentences with AND! What are you gonna do about it? You’re all the way over there and I’m all the way over here. Anyway, this reuben was cold and still managed to be delicious. The tempeh was crispy and flavorful, the fake 1000 Island was cool and creamy, and the saukraut was plentiful. All on a nice marble rye. This sandwich is on the cafe’s menu and is served hot off the grill with fries. They have a plethora (always sounds like a disease to me) of other options and now all I need to know is who is going with me?
Well, I am off. I have a potluck to attend tonight and I must go put on my face, lest I scare the children.

Okay, not really that fun if you’re staying up late only because you just can’t sleep. Boo for insomnia! That red wine probably didn’t do me any favors.
Here is Bella checking out my morning sludge. I have no greens today so I added wheatgrass powder. That mixed with the cacao makes for one funky looking breakfast. The upside is people on the bus will now look at me and envy my discipline. In my head.
Thanks to those of you that commented on yesterday’s blog and those that left kind words on Facebook! I’m so excited that people are excited. Excitement is everywhere!
I’ve got to make this quick as I have to go to work soon. First day back after vacation=barf. I was gone for a week and a half and haven’t taken time to do any real grocery shopping. I’ve been living mostly on convenience foods since I’ve been back. My lunch today is comprised of leftovers and some random things I found to throw in. Into my Laptop Lunchbox, that is! If you own one of these, everyone that ever sees you eat your lunch will tell you how cute it is. I am sort of convinced that when they say “cute” they mean “childlike”. I don’t care though! Makes things easy.
Clockwise: Some bag salad, dark chocolate covered almonds from Trader Joe’s, frozen broccoli, and leftover vegan Fideo. Not exactly nutrient dense stuff but better than anything I could get at the market across the street from work.
I will leave you all with a question today and PUH-LEASE comment again with an answer! It will actually help me write the blog. Consider it research. Yeeeeeeeahhhh, research.

Welcome to my blog. The one that’s been hanging out in the back of my head for the past few years. It’s going to be all about food. Food that I make, bake, and buy. Or just dream about.
I was partially inspired to finally make it happen by some recent diet changes and also by a conversation I had last week. I was telling a friend all about how, on Sundays, I like to prep food to have for easy, healthy lunches throughout the week. I mentioned I often make a pot of quinoa and she said, “See, I just WISH I knew how to make that kind of stuff!” It was a sweet and honest moment and it really inspired me.
We all come from different backgrounds, different palates, and different capabilities in the kitchen. What may be old hat to me could very well be intimidating to someone else. Personally, I’ve never felt too intimidated by just getting in there and experimenting. The past few years have taken me on an interesting journey with food (another subject for another time). I’ve fallen in love with healthy vegan food, holistic medicine, and the idea that our diets can help make the planet a better place. I am by no means an expert in any of these areas but I’m so very excited to begin documenting what I learn. I can only hope it helps people feel empowered to take charge of their health and to get excited about new food options. Which is why I REALLY hope people comment, ask questions and start new conversations!
Since this is my very first post, I will begin with a recipe for the smoothie that usually begins my day. Despite it’s bright green color, it tastes delicious and puts me on the right track, physically and mentally.
A Smoothie for All Seasons
1 cup almond milk
1 frozen banana
1 scoop vanilla protein powder (I’m on a Sun Warrior kick, thanks to the amazing Gina)
2 tablespoons raw cacao powder
2 teaspoons raw maca powder
1/4 teaspoon cinnamon
3 giant handfuls raw spinach
(optional add-ins: flax oil, probiotic powder, chia seeds, etc)
Put everything into a blender and blend until smooth. Hence, the name.
I love smoothies for breakfast because they are so adaptable. Not into chocolate? Skip the cacao. Have an overabundance of frozen mango? Well, first, you’re weird and second, throw it in! Really, smoothies are so customizable as long you’ve got liquid and something freezy. I think you get the gist.
